Maggie, the hostess and hardworking farmer, was kind enough to give me a Frikkadelle(meatball) recipe that she learnt from her Gran (who grew up in De Rust).
Ingredients:
- 500g lean beef mince
- 1 beefstock cube, mixed in half a cup of boiling water
- black pepper to taste
- 2 slices of white bread, soaked in milk
- 2 finely chopped carrots
- 1 finely chopped onion
- 1 egg
- 2 Tbsp chutney
- 1 Tbsp vinegar
- 1 tsp mustard powder
- 1 tsp paprika
- 1 tsp dried parsley
- cake flour
- 1 cup cream
- mix everything together and form balls with the mix
- roll meatballs in flour
- arrange on a baking dish and pour cream over
- cover tightly with foil and bake for 20 mins at 180 C
- take the foil off and bake for another 15 mins
